Welcome to the BAIE Wines Series – ‘Wine Lives’ bringing you up close and personal with some of the fascinating people in wine that we get the pleasure of working with. This week we are delighted to introduce you to Peter Fyar – owner of Ocean Grove Cellars. Peter is a wealth of knowledge and always has a spring in his step and is a fantastic supporter of local wines.  He loves a bit of banter and we love him for it. Here’s a sneak peak into his wine life…

Peter, you are obviously a veteran in the industry having run bottle stores for around 30 years now… where did it all begin?

In the 70’s I was working as a Primary School teacher and a colleague at the time whose family was interested in food and wine dragged me a long to a back door wine sale at one of the local pubs in Ballarat. I told him I was a ‘beer’ bloke only, but went along and we picked up 3 dozen bottles of Penfold’s wines for around $3 a bottle – they were great wines – and I was hooked!  Fast forward many decades in the public service it was time to make a change for what had now become a huge passion, and I opened Jack’s Wine and Spirits in Newtown, Geelong.  Some years after that with young family in tow we ventured to Ocean Grove to open Ocean Grove Cellar and the rest is history.

It’s like choosing a favourite child I know, but what’s your all time favourite wine?

That’s a very hard one… there’s been a few… I certainly enjoyed the ’83 Grange that I had a Tetsuya’s last year in Sydney for my anniversary, I’ve had it in the cellar for 20 years and it was sublime. But as they say… ‘there are no great wines just great bottles’, but definitely was one of the great ones for me. I would have to say I have a European palate – great French wines for the Rhone and Bordeux are superb and being a wine merchant I have had the great privilege of special tastings and allocations of some highly covetable wines form these regions.

What do you love about what you do?

I’d have to say it’s the interaction with our customers, talking about wine and food and wine matches and providing good old fashioned advice, knowledge and service that makes people’s day.

Lastly Ocean Grove Cellars is obviously a family affair, with you working closely with son Isaac to run the business, tell us more?

I really like working as a team with Isaac, we have similar passions in wine and there is nothing better than sharing a great bottle with him. Working with him broadens both of our experience and I wouldn’t have it any other way.

We made the very difficult decision not to take part in Toast to the Coast and stocked only with our current valued wine stores and restaurants… we didn’t go looking for new outlets… and here we are in March sold out! There is always a silver lining, and that is we have now completed Vintage for 2018 and the fruit from our little patch was spectacular. As the old saying goes ‘great wine is made in the vineyard’ and this year Simon and Pete’s meticulous work with the growing season we have had, means there is some pretty fine BAIE Wine headed your way in the coming months.

WHAT’S HAPPENING AT BAIE

Vintage 2018

We are all working pretty flat out at the moment in the lead up to what is shaping up to be a wonderful start to the 2018 vintage. Sim has been hard at it over the last few weeks getting the nets on the vineyard (not his favourite job it has to be said) to protect those almost ripe bunches from the birdlife, and preparing to get our hands on those grapes for our winemakers to begin the process of crafting some exciting new wines for you all. The overview of the crop at the minute is that the fruit is ripening well, the health of the vines is excellent and the overall balance in the vineyard is exactly where we want it to be. Can’t wait!


APCO Wine Walk

SUMMER ENTERTAINING

We don’t know about you… but summer days leaves us feeling a little more adventurous about what we are serving up on the deck or at the beach for the perfect evening with friends. Check out this beautiful recipe that we are literally addicted to this summer… and to complete, serve with a chilled glass of BAIE Pinot Gris (6 or 12packs available here) for dining perfection. Enjoy.

SWEET N SPICY SRIRACHA GLAZED SALMON

INGREDIENTS

    • 1/4 cup reduced-sodium soy sauce (or tamari for gluten-free)
    • 2 tablespoons honey
    • 1 tablespoon rice vinegar
    • 1 tablespoon Sriracha sauce (or to taste)
    • 1 tablespoon grated fresh ginger
    • 1 tablespoon minced garlic
    • 1 salmon fillet, cut into  200g pieces
    • 1 1/2 teaspoons sesame oil
    • 2 tablespoons finely chopped scallions, for garnish

PREPARATION

    1. In a large zip-top plastic bag, combine the soy sauce, honey, vinegar, Sriracha, ginger, and garlic. Add the salmon, toss to coat evenly, and refrigerate for at least 1 hour, or up to 8 hours, turning the fish once.
    2. Remove the salmon from the bag, reserving the marinade. Heat a large sauté pan over medium-high heat and add the sesame oil. Rotate the pan to coat the bottom evenly and add the salmon. Cook until one side of the fish is browned, about 2 minutes. Flip the salmon and cook until the other side browns, 2 more minutes. Reduce the heat to low and pour in the reserved marinade. Cover and cook until the fish is cooked through, 4 to 5 minutes.
    3. Place a piece of salmon on each of 4 serving plates and sprinkle with the scallions.

For the first time in 10 years…

NEW RELEASE – BAIE SAIGNE’E

We are over the moon, excited about a new addition to the BAIE Wines range – the first in 10 years and we will be releasing it online and in selected Wine Stores as at Monday 30th October.

Adding a Saigne’e is something we are so happy about – we have been long time Saigne’e fans – but it’s important people understand that it is a very different wine to our current Rose’. BAIE Saigne’e – (French for ‘bleeding off’) refers to our winemakers techniques of carefully extracting the free run juice after we have picked our Shiraz  followed by 6 months in third and fourth fill French Oak Barriques. This is a fuller flavoured, fruit driven, savoury Rose’.

Richard Crowley from Barwon Heads Wine Store wrote the following review –

“The new Saignee from Baie Wines is a lovely addition to their line up. It’s a more serious rose – as you would expect from a saignee style – deeper in colour richer thanks to six months in oak. On the palate, the ‘Baie style is noticeable, that familiar soft and creamy texture which is quickly followed by hints of cherry and a much richer mouthfeel leads itself as a perfect food match. I look forward to putting this on the table over summer”.

BAIE ROSE’ SPRITZ

W are so excited to announce the launch of summers go to drink the divine ‘BAIE Rose’ Spritz’ as seen when launched at the amazing luxury Level Seven Rooftop Bar at Primus Hotel Sydney by the team at Delicious (we can hardly believe it)!!  See here the recipe the inspired bar staff at Primus Hotel created –

INGREDIENTS

  • 60ml BAIE rosé wine
  • 60ml sparkling wine
  • 30ml Aperol
  • Orange Zest
  • Orange peel to serve

METHOD

  • 1 Place spiced ice ball in glass and pour over rosé, sparkling wine and Aperol.
  • 2 Sprinkle Orange Zest.
  • 3 Swirl glass with ice ball and garnish with an orange peel.


TOAST TO THE COAST

We know how much some of you enjoy attending Baie Wines during Toast to the Coast. Unfortunately this year Baie will not be opening their doors to the public as after sell out vintages in the last two years we are trying to make sure our wine lasts a little longer for all! We love Toast to the Coast as much as you do so are very disappointed not to be attending but hope very much to be back next year.


 BUNGALOW

We are excited to reveal some more details for the upcoming Spring Grazing lunch at The Bungalow Restaurant this Wednesday 25th October for Geelong Cup, where we will be serving all of your BAIE Wines favourites by the glass/bottle.  The format of the day will be kept quite relaxed and informal.  The team at The Bungalow will be serving 16 different shared items over four courses.  The Geelong Cup will be streaming live and you will be able to try your hand at a sweep or two with prizes awarded during the afternoon. You can still ring The Bungalow team on 52163025 to book a table for your raceday gang until Tuesday 24th – but hurry only a few tables left.

We are excited to announce that yet again we are so proud to count ourselves among the lucky few to have been awarded Medals at this years Geelong Wine Show held last week on the 17th and 18th October. This year we have bagged a Bonze Medal for our 2017 BAIE Pinot Gris and a Silver Medal for our 2017 BAIE Rose’.  We couldn’t be more proud of the hard work Simon and Pete put in the vineyard and our winemakers Robin and Marcus put in at the winery to bring about award winning wines each year! RAVE REVIEWS 

We are super excited about the  very kind things people are saying about our wine of late. A recent review in the GT Magazine by Callum MacPherson of Bottles and Barrels in Geelong described the 2017 BAIE PINOT GRIS as showing ‘a pale copper colour’, ‘ripe pear and sweet honey’ and the ‘mouth feel rings for minutes’ – now if that’s not a reason to get yourself some of that golden goodness then we don’t know what is!

And of course there’s Halliday… the recently release 2018 Halliday Wine Companion rated –

BAIE 2015 Shiraz as 95 points – which reflects an ‘Outstanding Wine – of Gold Medal Standard, usually with a great pedigree.’

BAIE 2016 Pinot Gris as 92 Points – ‘Highly recommended wines of great quality, style and character.’

BAIE 2016 Rose’ as 90 Points – ‘Highly recommended wines of great quality, style and character. ‘(Also Gold Medal Winner at the 2016 Geelong Wine Show).

Now… the not so great news is we have sold out of all those wines – yep, you knew it before James Halliday did… so those wines were bought up, sipped and enjoyed before the book even came out.

We are strapping on the skates…

It’s crunch time here at BAIE Wines – over the coming weeks comes a lot of excitement, activity and wine….yes wine is on its way!! So while the new vintage wines are developing beautifully, we have been working madly behind the scenes to have our 2017 labels (they are gorgeous), caps, boxes all delivered to the winery so we can get some wine into them…… AND out to you! Bottling time is that final sigh of relief where a year of hard work, patience, skill and a few prayers thrown in for luck finally come to fruition. Bring it on we say!

In addition we have a ripper of a day planned for the Winter Shiraz festival  – (don’t forget to save the date Saturday 8th July and Sunday 9th July), where we will open our cellar doors for the first time this year!! ANNE

It is our great pleasure to introduce to Anne, (Simon’s Mum) who has been an integral part of what we do at BAIE Wines since the very beginning!  In the early years she worked alongside Peter in their Melbourne medical practice whilst raising their 3 children. When it came time to relocate to the rural life they both so love, her hard work meant that the true beauty of BAIE Park was born.

Anne has designed and worked on the stunning grounds at BAIE Park and spends much of her time now hosting brides and grooms to assist them in creating their perfect wedding day.  The success, magic and beauty of what she has created for so many brides and grooms is a testament to the fact that she treats each couple and their families as someone dear to her…. she cares about their day, and she does everything in her power to make sure weddings at BAIE are unique and once in a lifetime for brides, grooms and their guests… and she wouldn’t have it any other way.

Have you been missing your Baie?

Ok so things are getting a wee bit desperate when these things start happening…

We are standing at our daughters netball game, and one of the gorgeous Mums there tells us a story of how when the found out that BAIE Wines was sold out she hid some bottles of Pinot Gris… and whilst couldn’t resist drinking one a while back, had saved her last one til Easter Sunday.

Or another divine BAIE Wines devotee emails us to let us know she scored the last known case of BAIE Rose’ in Geelong as she had promised her Sydney girlfriend that they would be drinking BAIE Rose’ on her trip down to the Bellarine

This is getting real people!! And while those grapes are doing all the right things and under watchful attention being crafted into some damn fine BAIE Pinot Gris, Sauvignon Blanc, Rose’ and Shiraz there are some of us who are missing them!!

So keep an eye on our Facebook Page for a little bit of fun we are having with ‘ Have you been missing your BAIE?’ stories. We will be asking people who are missing their BAIE Wines to take a photo of where they would normally be sipping their BAIE Wines… but aren’t – think empty glass next to a cheese platter… sad face with nothing in the bottle…… or any lucky soul who still has some left …. a pic of them enjoying it (to make the rest of us jealous of course). Winner will be treated to a twin pack of their favourite BAIE Wines – because yes we have about 2 bottles hidden too that we are happy to share for those who are missing… or savouring , the last of their BAIE.

Simon is a Husband, Dad and Farmer – first and foremost, and what you see is what you get… and that’s what we all love about him. Calm, solid and dependable – he’s the guy that you go to when you need a steady hand and the gods’ honest truth (even if you don’t like it some time!) We are so very glad to have him heading up what we do as he sure does know what he’s doing in all aspects of the vineyard and farm… having studied Agricultural Science at Melbourne University, after which he spent a number of years working in various government and corporate agricultural roles.

It was his passion for family, farming and vineyards led him back to the Bellarine – where many of his childhood weekends were spent. Simon now farms crops and cattle across the Bellarine, is the vitculturalist at BAIE Park and runs the wine business with Nadine, whilst raising their young family. He is also the president of the Geelong Wine Association and is passionate about promoting Geelong as a premium wine region. Needless to say he’s a happy (but busy) man.

How long does wine last once opened?

So you’ve knocked back that oh so necessary glass of vino on a Monday night… but you were planning on an alcohol free week… what to do with the rest of the bottle – (and no, drinking the rest of it on Monday night, is not part of our helpful hints below).  Here’s a few guidelines to follow and how to help your wine last longer

Sparkling Wine

1–3 days in the fridge with a sparkling wine stopper. Sparkling wines lose their fizz quickly after opening. A method traditional such as Champagne, will last a little longer than a tank method sparkling wine. The traditional method wines have more bubbles in them when they’re bottled, which is why they tend to last longer.

Full-Bodied White Wine

3–5 days in fridge with a cork Full-bodied white wines, like oaked Chardonnay tend to oxidise more quickly because they saw more oxygen during their pre-bottling ageing process.

Light White, Sweet White and Rosé Wine

5–7 days in fridge with a cor.k Most light white and rosé wines will be drinkable for up to a week when stored in the fridge. You’ll notice the taste will change subtly after the first day, as the wine oxidizes, so that the wines become less fruity or vibrant.

Red Wine

3–5 days in a cool dark place with a cork The more tannin and acidity the red wine has, the longer it tends to last after opening. So, a light red with very little tannin, won’t last open as long as a rich red.  Many red wines will even improve after the first day open.

How to help them last longer

Wines can last for a number of days after you have opened them , though you can do a few things to help it last longer. 1) Refrigerate the wine. Wines go “off” once they have been open because they are interacting with oxygen while warm. Cool the wine and you slow down the rate of those reactions. 2) Removing the oxygen from the bottle helps to prevent those reactions from happening. 3 tricks are to: a) Transfer the wine to a smaller bottle.  b) Use a vacuum pump to evacuate the air from your bottle. c)Add an inert gas to your bottle so that it forms a protective blanket over the wine’s surface. These are commonly sold in many wine accessory stores.

So look after those precious bottles of BAIE Wines if you have a sneaky stash at your place, and we cross our hearts we are working our hardest to get some to you all to have open and on your kitchen bench in no time.
